These brightly patterned beans were handed down within a small community for several generations. Jacob's Trout beans are slim, shiny and white with splashes of deep maroon. The bean has a plump kidney shape, earthy flavor, and sweet, mealy texture. Renowned for its baking qualities, Jacob's Trout is good in salads or on itsown as a side dish. Sometimes called Dalmatian bean or Torellen.
